This homemade recipe starts with fresh Russet potatoes and a light or medium miso paste. The result is a healthy potato soup that everyone will love.

I love how easy it is to make this delicious recipe on the stovetop. Because it comes out nice and creamy, but you don’t need to add cream. That means this recipe is on the healthy side.

It’s loaded with flavor thanks to the miso paste and the turkey bacon. And you can easily make it in the co*ck pot, slow cooker, or instant pot with just a few simple modifications.

Just remember that the smaller you cut the spuds, the less time that it will need to cook. Because you don’t want to overcook this.

Using a Light (aka white) Miso paste for a potato soup base, it allows for a salty soup without the pains of adding salt or seasoning.

This works very well, especially if you’re feeling sick. Because it helps those wonky taste buds taste the actual flavors, rather than your taste buds guessing what it should taste like.

What is Miso Paste?

Well, whiteMiso paste is a great alternative to regularchicken, beef, or turkey bouillon cubes.

Because you only use one or two teaspoons in a recipe, it lasts a very long time as well. Plus, it’s a great alternative to salt. And it’s very versatile.

So, try it in all of your recipes!

Simple Substitutions in Potato Bacon Soup

If you want to make a few simple changes to your homemade soup recipe, you can try these.

  • You can substitute center-cut bacon for the turkey bacon. Or, try vegan bacon to keep this vegan.
  • Try substituting cubed ham instead of the bacon, if you prefer.
  • Make an easy potato soup with chicken broth instead of water.
  • Use half cream and half water to make this creamier. Or, use an immersion blender to make it creamier without adding dairy.
  • If you don’t have Russet potatoes, you can also use Yukon or even red.
  • Save time and start with frozen potatoes from the grocery store rather than cooking your own. You will need to adjust the cooking time if you do this.
  • Toss in a handful of your favorite cheddar cheese right before the meal is done to make it a cheesy soup.

Potato Bacon Soup Slow Cooker

All you need to do is to combine all of the ingredients except the chives and sour cream in the slow cooker. Then, cook it on low for 5 to 6 hours.

When the potatoes begin to fall apart, the meal is done.

Finally, just add bacon, chives, and sour cream and serve.

Potato Soup Instant Pot

It’s very easy to make this meal in the Instant Pot. Just follow these simple modifications when you cook it.

  • First, add the potatoes and water to the pressure cooker and cook on high for 8 minutes. Then, do a quick release.
  • Then, set the Instant Pot or pressure cooker to saute.
  • Next, add the miso and stir and let it boil for about 5 minutes.
  • Finally, garnish with bacon, sour cream, and chives.

Ingredients

  • 2-3 Medium russet potatoes
  • 2 tsp Light/White Miso Paste
  • 4 cups Water
  • 2-4 tbsp Turkey Bacon
  • 1 tsp Agave Nectar
  • 1 tbsp Diced Chives
  • 1/4 cup Sour Cream

Instructions

  • Peel and cut potatoes to bite size pieces.

  • Place potatoes in the stockpot, cover with water until potatoes are just submerged, cook on high heat, and bring to boil. Boil for 10 minutes.

  • Drain potatoes while leaving 2-4 tbsp starch water remaining in the pot.

  • Add 2 tsp Miso paste, and add 2 cups remaining water. Stir to dissolve paste.

  • Optional: Add 3-5 sprigs of chive or tbsp of turkey bacon to pan for added soup flavor.

  • Bring pot to boil and add 1 tsp of agave nectar.

  • Turn down heat and allow pan to simmer for 10 minutes.

  • Serve hot topped with turkey bacon, sour cream, and chives for loaded potato soup.

Notes

Make this a vegan potato soup by simply using vegan bacon, or omitting the bacon altogether.
